Ground Beef Taco Filling - Picadillo
I love this filling for tacos or burritos. Again, with our high-quality ground beef the taste is as good as (or better than) shredded beef. Also, I don’t usually follow a recipe exactly—sometimes you need to make it how you like it so, if there is something you don’t like…leave it out or switch it up…for example, if you like bell peppers better than green chiles then use what you like. If you like mushrooms-add them.

Refried Beans
First of all, you need to buy good dry pinto beans. They are usually found in the Mexican food section or near the rice and beans. Look for beans that are lighter in color. If they are a dark reddish brown color don’t bother buying them. That means they are old. Fresher beans are lighter in color and cook up much better.

Raised or Swedish Meatballs
This was one our dad's favorite recipes and he would make them all the time. He loved them because they were a simple to make meatball that wasn't dry. They're also great because after they're baked they can be frozen in individual serving containers to help you meal prep or pack for an easy lunch.

Taco Soup
This great soup is super easy and one of our family favorites. You almost always have all the ingredients you need in your pantry and it keeps for several days (we even think it's better on day 2). It is also very scalable so if you are feeding an army you just keep the ratios and keep adding ingredients making it the perfect party dish!
